In keeping with Dewey’s mission of creating a “Modern Coastal” cuisine, its seasonal cocktails are inspired by a uniquely American tradition, the Tiki Cocktail.
The history of Tiki culture tracks its heritage back to California of the early 1930s when Ernest Beaumont Gantt (later known as Don the Beachcomber) and Victor Bergeron (Trader Vic) celebrated the repeal of the 18th Amendment and the end of 15 years of enforced sobriety with drinks featuring fresh fruit juices, powerful spirits (predominantly rum), and multiple ingredients.
Dewey honors the Tiki tradition with wholly new artisanal cocktails with the same luxuriant flavors, a variety of spirits (rye, gin, vodka and tequila) and that familiar je ne sais quois cool that always seems to accompany, tropical beaches, palm trees, and spectacular food.
